Ingredients:
- 1 envelope of yeast.
- 1 tsp. of sugar.
- 1/4 cup of warm water.
- Pinch of ginger.
- 2 cups of warm buttermilk.
- 1/3 cup of honey.
- 1/4 cup of butter melted and cooled a bit.
- 1 tsp. of salt.
- 3/4 tsp. of baking of soda.
- 6 cups of white bread flour.
- In a small bowl, mix together the ginger, sugar, yeast and water and set aside for 5 minutes so that the yeast is activated.
- Add buttermilk, honey, salt and baking soda to the yeast mixture and mix until combined.
- Add in the flour and mix using an electric mixer for about 5 minutes on low until smooth.
- Add in the butter and mix until incorporated.
- Add the rest of the flour gradually while mixing on low.
- Once the dough starts pulling from the sides of the bowl, remove it to a floured surface and knead until smooth.
- In a greased bowl, place the dough then turn it to grease the top. Cover and let rise for 1 1/2 hours.
- Punch the dough down and form two loaves. Replace the loaves into the greased bowl, cover and let rise for another 45 minutes.
- Bake the bread for 30 minutes in a preheated oven to 400 degrees. You should cover tops with foil if you see that they brown too fast.
- Remove the loaves from the oven and add a little melted butter to the top.
- Let cool for about 10 minutes before removing it from the pan to let cool completely on a rack.
