Ingredients
- 4 chicken breasts
- 1 can of diced tomatoes with basil, garlic and oregano (do not drain).
- ½ Cup Greek yogurt
- 3 Cups instant stuffing mix
- ½ Cup diced red bell pepper
- 1 Cup Sargento® Chef Blends™ Shredded 6 Cheese Italian, plus additional for topping.
Instructions
- Preheat oven to 375
- Prepare 5x9 baking dish with a light coat of olive oil.
- Pound each chicken breast to about ½-3/4 inch thick.
- In a large bowl add Greek yogurt and the can of tomatoes and mix thoroughly.
- Add stuffing mix to tomato mixture and combine until well blended.
- Take about ⅓ of the stuffing mixture and layer into the bottom of the prepared baking dish.
- Add the shredded cheese into remaining stuffing and combine.
- Divide remaining stuffing into 4 portions.
- Take the first portion of stuffing, place it in the center of the flattened chicken breast, fold together like a taco shell, and place in the baking dish.
- Repeat with remaining chicken beasts and portions of stuffing.
- Bake stuffed chicken breasts in oven for 40-45 minutes (or until cooked thoroughly).
- Remove from oven and top with additional shredded cheese.
- Serve immediately with your favorite vegetable sides.
