Baked Penne








Ingredients

3 tsp unseasoned bread crumbs

6 c cooked whole wheat penne

3 1/2 c marinara sauce

2 c shredded reduced-fat mozzarella

1/2 c diced ham

6 eggs, lightly beaten

3 tsp grated Parmesan

Tossed salad (optional)


Directions

Heat oven to 350 degrees . Coat a 3-quart casserole with nonstick cooking spray and sprinkle bottom and sides with bread crumbs.

In a large bowl, combine penne, 3 cups of the marinara sauce, 1 1/2 cups of the mozzarella, the ham and eggs. Spoon into prepared casserole and sprinkle remaining 1/2 cup mozzarella over top. Bake at 350 degrees for 30 minutes. Sprinkle Parmesan over casserole and bake an additional 15 minutes.

Cut into portions and serve with remaining 1/2 cup of marinara sauce, warmed, and, if desired, a tossed salad.
