Ingredients:
- 4 cups of prepared rice.
- ½ lb of boneless chicken breast (cooked and cut into bite size pieces) or same amount of medium-size cooked shrimp.
- 1 cup of frozen peas and carrots.
- 1 white chopped onion.
- 2 cloves of minced garlic.
- 2 eggs.
- 3 tbsps of sesame oil.
- ¼ cup of soy sauce.
Directions:
- In a large skillet, heat the sesame oil on medium heat, add in the onion, garlic, peas and carrots and stir fry until tender.
- Add the eggs and scramble to mix with the vegetables then add in the rice, chicken and soy sauce. Mix all the ingredients together then remove from the heat.
