*It’s important to take your time when adding the crumb topping to the top of the batter. Start at the edges and work your way towards the center. This will help prevent the crumbs from sinking into the cake since the heaviest part of the batter (the center) will have some lift by the time you get there. And whatever you do, don’t pat the crumbs down – you’ll push the air out of the batter and prevent the cake from rising.
INGREDIENTS:
1 box chocolate cake mix, plus ingredients to make cake
2⁄3 cup granulated sugar
2⁄3 cup packed brown sugar
1⁄2 tsp salt
1-1/2 tsp cinnamon
16 Tbsp butter, melted and cooled slightly (two sticks)
1/4 cup cocoa powder
3-1/4 cup cake flour
INSTRUCTIONS:
Preheat oven to 350 degrees. Lightly spray a 9x13-inch pan with cooking spray.
Prepare cake mix according to package directions. Pour into prepared pan.
In the bowl of an electric mixer, combine granulated sugar, brown sugar, salt, cinnamon, butter, cocoa powder and cake flour. Mix until combined and crumbly. (If the mixture is too crumbly, add more melted butter.)
Sprinkle crumb mixture over cake, covering completely.
Bake for 30 to 35 minutes.
Top cooled cake with powdered sugar, if desired.
